Ingredients
1 Small punnet rosa/cherry tomatoes (160g)
1 Orange pepper
1 Yellow pepper
2 Medium baby marrows/courgettes
1 Medium aubergine
2 Large red onions
½ Punnet button mushrooms (100g)
8 Wooden kebab skewers
2 Tbs. Olive oil
1 tsp. Salt
1 tsp. Pepper
2-3 Sprigs of rosemary
Preparation
Place the 8 wooden skewers into a tray of cold water & leave to soak (this is to stop them from burning)
Prepare all the ingredients: Cut the peppers, courgettes, aubergine & red onions into chunks. You can leave the rosa tomatoes & mushrooms whole
Thread the vegetables onto the skewers in rainbow order (red, orange, yellow, green, purple & white)
Pour the olive oil into your hand & rub to coat the kebabs. Season with salt, pepper & fresh sprigs of rosemary.
Cook on the braai/grill or on a hot griddle pan.
