Ingredients
1 Medium red onion, chopped
2 - 3 Cloves garlic or 1 – 2 tsps. crushed garlic
½ to 1 Packet of Mexican spice – e.g. Chicken fajita mix or Chili con-carne
1 Punnet mushrooms
1 Punnet fresh tomatoes
2 Big handfuls of baby spinach
Pinch of salt (to taste)
Lettuce cups/boats for serving
Preparation
Sauté the onion & garlic until translucent.
Add the Mexican spice & cook for 4-5 minutes to develop some of the flavour
Add the mushrooms, fresh tomatoes & baby spinach – simmer until the spinach is slightly wilted
Add a pinch of salt if you find it necessary
Serve the mixture in lettuce cups with fresh salsa (onion, peppers, tomatoes, coriander leaves)
