Ingredients
1 Head of cauliflower
½ Cucumber
8 Tomatoes, halved & deseeded
3 Bunches of parsley
1 Bunch mint
1 Bunch chives or 1 spring onion
Dressing:
2 Tbs. olive oil
Juice of 1 lemon
3 Cloves garlic, crushed
½ tsp. Salt
½ tsp. Ground pepper
Preparation
Grate the head of cauliflower using the large grate option
Finely dice the deseeded tomatoes and cucumber & add it to the cauliflower
Finely chop all the herbs & add to the cauli-mix.
Mix together the dressing ingredients & toss into the cauli-mix.
Serve and enjoy!
